Breakfast. It’s the most important meal of the day, but it can become very boring very quickly.

Too often we treat it as a meal of convenience – eating the same thing day after day to keep us full until lunch time – rather than something we can truly enjoy.

Fortunately there are plenty of tasty recipes that are not only incredibly easy to make, but will turn breakfast from a bore into one of the highlights of your day! We’ve picked 15 of our favourites that we think you should try…

Coconut Yoghurt with Granola and Fruit

It’s quick, easy and it can be dressed up in loads of different ways. Simply pop some coconut yoghurt (or whatever your favourite vegan yoghurt) in a bowl and top with granola and fruit! You could even add chia seeds, coconut shavings or vegan chocolate chips if you’d like.

Smoothie Bowls

Smoothie bowls are probably all over your Instagram feed. Just like yoghurt and granola, smoothie bowls can be dressed up in tonnes of different ways, with different toppings and ingredients. Vegan 3-Ingredient Pancakes

Mix 1 whole banana, 4 tbsp of your milk of choice, and 350g of rolled oats together in a bowl and cook on the stove like normal pancakes. Simple, quick and delicious!

Wholegrain Cereal with Fruit

Grab your favourite wholegrain cereal and your milk of choice and dress it up with your favourite fruits and other toppings.

Homemade Granola Bars

Smoothies

If you don’t have the time to make oatmeal first thing on a morning, put some oats and your chosen milk in a mason jar or a travel bowl, add fruit and leave it in the fridge overnight. In the morning you’ll have perfectly soft, ready to eat oats!

Chia Pudding

A bit like overnight oats, chia pudding is something you can make the night before and eat on-the-go. Mix chia seeds and your milk of choice in a jar and leave in the fridge overnight, add fruit in the morning and there you go!

Rice Cakes with Peanut Butter and Fruit

Quick, simple and requires minimal effort. Slather some peanut or almond butter on a rice cake or two and top with fruit. Voila, easy, healthy breakfast.

Avocado Toast

Quintessentially vegan, top wholegrain toast with smashed avocado. If you want more flavour, add some salsa or other veggies.

Tofu Scramble

Scramble soft tofu in a pan and add vegetables of your choice. You could even add this on top of toast for a more filling breakfast.

Vegan Breakfast Burrito/Tacos

Scramble some soft tofu and add to a tortilla wrap with beans, avocado and tomatoes.

Fruit Salad

Quick and simple. Throw your favourite fruits into a bowl and go.

Vegan French Toast

Perfect for those lazy weekend mornings. Blend flour and almond milk and dip in slices of day-old bread. Cook in a pan until a crust develops. Serve drizzled with syrup and strawberries.
